RECETTES DE CUISINE MAURICIENNE DU MOIS

RICE & COCONUT MILK MAKI WITH FRESH FRUITS

Chocolate pancake


250g flour
4 eggs
50 ml of honey
500ml of milk
50g of cacao
Prepare the pancakes on a non stick pan, without using any fat.

Raspberry coulis


250g of raspberry pulp
75g of sugar
1 tablespoon of vinegar
1 tablespoon of balsamic vinegar
½ lemon juice
Put all the ingredients in a pan and cook on gentle heat for 20-25 mins.

Rice pudding with coconut milk


200g of cooked rice
1 tin of coconut milk
25g of coconut powder
75g of sugar
25ml vanilla essence
Some pawpaw, kiwi, pineapple and water melon cut into sticks
Fresh mint leaves
Put the coconut milk to boil, add sugar and vanilla essence. Add the cooked rice and simmer on gentle heat for 20-25 mins. Leave the pudding to cool.

Method for preparing the Maki:


On a pancake, spread a layer of rice pudding, place some fresh mint leaves and fruit sticks. Roll the pancake and cut into maki. Serve the Maki with raspberry coulis.
