 Chicken Curry Mauritian Style
Ingredients (10 pax)
2 sliced onion
3 chopped garlic
3 teaspoon chopped ginger
1 teaspoon chopped thyme
1 chopped curry leaves
30 g chopped coriander leaves
1 teaspoon saffron powder
3 tablespoons curry powder
2 teaspoons of aniseed powder
2 green chillies, sliced
3 tablespoons of oil
4 pinches of salt
2 pinches of pepper
2 kg chicken, boned and cut in small pieces
METHOD
In a sautéed pan, heat oil, add onions and cook for 5 minutes. Add garlic, ginger and cook till coloured. Add curry powder, saffron powder, aniseed powder and stir until paste becomes consistent. Add curry and green chillies and let cook for 10 minutes.
In another pan sauté the chicken, already salted and peppered, until golden brown. Add meat to sauce and cook with cover on for 15 minutes stirring from time to time. Verify seasoning and sprinkle coriander on curry. |
